This recipe was posted by my friend Annie who made this yummy ice cream with her two little girls aged 4 and 2! They loved every minute of the mashing and stirring and licking of sticky fingers that was involved in making what is probably the best pud in the world. This is such an easy recipe and the end result is delicious and would give Ben and Jerry’s a run for their money – not bad for a 4 and 2 year old! You go girls! Thank you for sharing. Tip from Annie; the ice cream comes out really quite hard, so scoop out your individual portions a bit before serving. You can also make this recipe with other soft fruit like nectaries, peaches, mangos, berries and also probably a good way of using any of these that are becoming a little old and wrinkly!
My tip as well is to buy some Askeys cones from your local supermarket – I get mine from Morissons. Ice cream in a cone, with sprinkles on the top is such a fab treat!
Makes a good tub!
Ingredients
- 1 Punnet of strawberries (the softer the better)
- 1 banana, broken into chunks
- 1 regular sized tub of mascarpone
- 1/2 a tin of condensed milk
- Sprinkles for decoration
Instructions
- Get a flat based dish, a masher or 2 (depending on how many are mashing!) and mash your strawberries and banana. Don’t worry if there are lumps.
- Add the mascarpone to the fruit mash. Again, don’t worry if there are lumps.
- Stir in the condensed milk.
- Pour into a freezable tub and wait for 6, long, hours!
- Serve with sprinkles, wafers or simply in a cone.
- Enjoy!
